No added sulfites. Soft pressing and quick start of the alcoholic fermentation with indigenous yeasts. After the fermentation, maceration at 28-29 °C for 10 days.
MALOLACTIC FERMENTATION
In steel tanks at a temperature of 22 °C with daily shaking of the fine lees.
AGEING TECHNIQUE
In steel tanks at a temperature of 13 °C for 4 months with regular batonnage to avoid oxidative phenomena.
