VINIFICATION TECHNIQUE
Soft pressing, fermentation at low temperatures 12-15 ° C. Conservation on the fine lees and ageing in steel.
SPARKLING PROCESS
Method Charmat (refermentation in autoclave). Refinement sur lies with periodic elevage for 4-5 month-old duration.
ORGANOLEPTIC FEATURES
Straw yellow with greenish reflection. Scents of orange blossom, a hint of sage, white melon, apricot, cardamom and toasted hazelnuts. Overflowing taste. It reflects the sense of smell, and it ends with a prolonged fresh-savory sensation.
Excellent as an aperitif and with seafood risotto.
